Well… this is a wild one. This barrel was stashed in the back of the shop for a very long time. When we found it, we tried and it and remember back the day it was first made. Aged for a bit over three years in one of our rum barrels, this gin started life as ‘Bills Gin’ long ago. The botanicals included some fun things like Buddah’s Hand, Bergamot, Jasmine Flower, accompanying the usual juniper, coriander, etc… The result after the time in the barrel is a very fragrant, slightly bittersweet gin that is knockout on its own, mixed in a G&T and used in a gin old fashioned. This is one of a kind, is ridiculously delicious and, like many of our gins, almost sold out.
