HOMEWORK ASSIGNMENTS

Homemade Coconut Syrup

  • 1 Can Unsweetened Coconut Milk

  • Same can filled with Rich Simple Syrup (2:1)

    Blend in your blender, keeps for 2 weeks or so.

Homemade Grenadine

  • 1 Part POM Pomegranate Juice

  • 1 Part Sugar

Add both to a nonreactive saucepan, bring to a boil, stir with a wooden spoon until sugar is dissolved and cook for about a minute. Let cool and store in a covered container in the fridge for up to one month.

Lemon Mint Oleo

  • Two lemons

  • Mint

  • Sugar

    Peel the two lemons, chop up about 8 leaves of mint and lightly cover with sugar in a covered container. Give contents a quick shake and let sit overnight. Strain the oil from the solids the next day, or just hold on to everything until we make the cocktail and I’ll show you a fun trick).

7C (YOU CAN’T) DRINK ON THE BEACH IN CALIFORNIA

serve in Plastic Solo Cups, rocks glass, or a hurricane glass

  • 1.5 oz Seven Caves Orange Rum or Tiki Gin

  • .5 oz Malibu (or Coconut Cream)

  • .5 Fresh Orange Juice

  • .5 Pineapple Juice

  • 2 bar spoons Grenadine

  • Garnish suggestions: Orange Wedge, Cherry

  • Optional substitution: Other white rums, Orgeat instead of Coconut

Need: Measuring jigger, cocktail shaker tins

Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds, pour entire contents into the glass of your choice. Top with pebble ice (or not). Garnish appropriately.

serve in a Wine glass, Collins glass (or a Nic and Nora if served up)

  • 2oz Seven Caves Summer Gin

  • 8 Mint Leaves

  • 1oz fresh lemon juice

  • .5 rich simple syrup (2:1)

  • Club Soda to top

  • Garnish suggestions: Lemon twist

  • Optional: Lemon/Mint Oleo Saccharum, Small cocktail strainer/sieve (for double straining)

Need: Measuring jigger, cocktail shaker tins, strainer

Combine all ingredients in a shaker tin. Add ice to the shaker (half a tin is fine). Shake well for about 15 seconds, and strain (or double strain) into the glass of your choice of glass. Use fresh ice if serving over ice. Top with club soda. Garnish appropriately.


7C Fancy Poolside Punch (aka The FPP Cocktail)

serve in Whatever…  the blender pitcher works too!

  • 2 oz Seven Caves Orange Rum

  • 4 oz Pineapple Juice

  • 1oz Orange Juice

  • .5 oz Malibu (or Coconut Cream)

  • .5 oz Orgeat

  • .25 oz Grenadine

  • 1.5c Ice

  • Garnish suggestion: Fresh Nutmeg, Orange Slice, Cherry

  • Optional substitutions: Orgeat instead of Coconut flavors, doubling for one

Need: Measuring jigger, blender

Combine all ingredients in the blender.  Blend for about 5-10 seconds (until fully mixed). Dump contents into the glass of your choice. Garnish with a bit of fresh ground nutmeg and any other garnish you see fit.
